From our delicate, sweet, crisp button come all the varieties in between: our standard closed cup, open cup (more flavour, adding a deeper rich colour to cooking), our large white closed cup which we aptly named the Greeba Giant (grown
for longer and kept tightly closed to give fuller flavour and
wonderfully crisp too). After this stage we allow them to open up into breakfast flats, or flat chestnuts in the brown variety, then stuffing mushrooms and portabello.
The
most mature of all is the portabello. With a rich intense flavour and
meatier texture it is by far the most flavoursome. From the button
stage it will take around a further five days to grow into a portabello.
Contrary to popular belief the more mature mushrooms, when fresh, are
by no means woody and they are a great alternative to meat both for
flavour and nutritionally.
